Cajun Chicken Burgers

 

Take the stress out of weeknight cooking with this quick burger recipe. Served in a jumbo roll, grilled Cajun-spiced chicken thigh fillets are loaded with carrot, spinach and aioli for the ultimate flavour explosion.

 

Ingredients:

1 tbs Cajun seasoning
350g Woolworths RSPCA approved chicken thigh fillets, fat trimmed
1 tbs extra virgin olive oil
1/4 cup garlic aioli
4 Woolworths crusty jumbo lunch rolls, halved, toasted
1 carrot, peeled into ribbons
1/2 pkt baby spinach leaves

 

Method:

Step 1.

Sprinkle seasoning over chicken.

Step 2.

Heat oil in a large frying pan over medium-high heat. Cook chicken for 3 minutes on each side or until cooked through.

Step 3.

To assemble burgers, spread half of the aioli over roll bases. Top with chicken, remaining aioli, carrot and spinach. Sandwich with roll tops and serve.
