Lamb Souvlaki Wraps


Delightful bundles of lamb, garlicky yoghurt and salad put the Mediterranean on your table in no time. Kali oreksi! (Bon appetit!)



1 tbs extra virgin olive oil
4 Woolworths soft white wraps
300g Woolworths COOK lamb strips souvlaki-style
1/3 cup Woolworths Greek-style natural yoghurt
1 clove garlic, crushed
1/4 head iceberg lettuce, shredded
1 Lebanese cucumber, cut into ribbons
2 tomatoes, thinly sliced
1 small red onion, thinly sliced into rounds
1/4 bunch continental parsley, leaves picked



Step 1.

Heat 2 tsp oil in a large non-stick frying pan over medium-high heat. Cook wraps, in batches, for 1 minute each side or until golden-brown. Transfer to plates.

Step 2.

Add lamb to pan and cook, stirring, for 5-6 minutes or until cooked through and browned. Remove from heat.

Step 3.

Combine yoghurt and garlic in a small bowl. Spread wraps with yoghurt mixture. Top with lettuce, cucumber, tomato, lamb and onion. Sprinkle with parsley and freshly ground black pepper. Serve.
